Norman, I enjoyed reading this, and I'm so glad IACP is highlighting your current work. I'm forever grateful that you were kind, gracious, and easy to work with when I was an editor at Fine Cooking. Not to mention the fact that your food was (and I'm sure still is) out of this world. I think I had my first-ever foie gras at Norman's (in Miami)- I'm thinking with a mango puree or mango+demi glace?
